OUR LETTUCE WILL BOLT

Dr. Craven is a city boy - he thought this was a picture of lettuce. It is not. It is a version of Pak Choi a leafy green highly prized in Korea. Dr. Craven was surprised to see healthy lettuce in temperatures of 100 degrees Fahrenheit. He was told that the heads should have bolted. They did not so he assumed that our lettuce does not bolt.

Dr. Kathleen Delate has a Ph. D. in environmentally sustainable agriculture. She was horrified to see Pak Choi described as lettuce. She was more horrified to see the statement that "our lettuce does not bolt". All plants go to seed eventually. But she is delighted to report that coldwater agriculture delays bolting and that the lettuce that is so produced is so delicious that it is harvested before the city boy can get over to take its picture. (Someday he will be here to photograph beautiful lettuce.) That day has arrived
