Borage tastes very similar to cucumber, and the flower is excellent for your heart. The young leaves are good for salads, and the larger leaves are boiled, yielding a refreshing summer drink. Grandmas preserve the leaves and candy them with a little lemon, sugar, wine, and water. It is a refreshing, cool herb that is used medicinally for fevers and pulmonary complaints. It promotes activity of the kidneys and helps in swelling. The dried herb is never used, but the leafy greens are.
